Roasted butternut Print E-mail

Ingredients:

  • 1 large butternut, sliced or cubed                                  
  • 1 Tbsp Olive oil
  • 2 tsp crushed garlic
  • ¼ cup finely chopped coriander
  • ¼ cup chopped rocket
  • salt to seasonE
  • 2 tsp honey

Instructions:

  • Preheat the oven to 180 ºC
  • Mix all the ingredients in a mixing bowl, making sure that the butternut is thoroughly covered,
  • Place the butternut on a baking sheet and roast until the butternut has turned golden and crispy.
  • Turn the butternut over during roasting to ensure even cooking.
  • Garnish with fresh coriander leaves and serve hot.
