Ingredients: - 1 large butternut, sliced or cubed
- 1 Tbsp Olive oil
- 2 tsp crushed garlic
- ¼ cup finely chopped coriander
- ¼ cup chopped rocket
- salt to seasonE
- 2 tsp honey
Instructions:
- Preheat the oven to 180 ºC
- Mix all the ingredients in a mixing bowl, making sure that the butternut is thoroughly covered,
- Place the butternut on a baking sheet and roast until the butternut has turned golden and crispy.
- Turn the butternut over during roasting to ensure even cooking.
- Garnish with fresh coriander leaves and serve hot.
