Ingredients  | Tomato Sauce: - Freshly cut Thyme and Oregano from your Garden,
- 1 Large Onion, chopped
- 1 teaspoon crushed garlic
- 4 Large Tomatoes
- 2 Tablespoons Thyme
- 2 Tablespoons Oregano
- ½ teaspoon Sugar
- Salt and Pepper

| Pizza Base: - Freshly cut Rosemary, from your Garden,
- 10g sachet dry yeast
- 1/2 teaspoon sugar
- 2½ cups plain Bread Flour
- 1 cup warm water
| | Pizza Toppings - A selection of your favourite vegetables (mushrooms; green peppers; pineapple etc.) for a vegetarian classic,
- Some pieces of Bacon, Salami, Chicken etc.

STEP 1: TOMATO SAUCE - Heat the oil; add the onion and cook over moderate heat until soft,
- Add the garlic and cook for 1 minute,
- Add the tomato and herbs,
- Add ½ teaspoon sugar,
- Add salt and pepper to taste,
- Cook over high heat until the mixture is quite thick,
The Herbs can also be tied together with string and removed after cooking. STEP 2: PIZZA BASE - Prehaeat the oven to about 200ºC
- Mix the yeast, sugar, a good pinch of salt and 1 cup warm water in a bowl
- Cover with plastic wrap and leave in a warm place for 10 minutes, or until foamy
- Sift flour into a bowl
- Add Rosemary and mix
- Make a well in the centre, add the yeast mixture and mix to a firm dough
- Knead on a lightly floured surface for 5 minutes, or until smooth
- Roll out to the tray size you need
- Brush the tray with a bit of oil, put the dough on the tray
At this point you can pre-bake the base for a short period before putting the sauce on. STEP 3: For some real interest you can brush the Base with some Pesto before adding Tomato Sauce - Spread Tomato Sauce over base
- Place selection of Toppings on Tomato sauce
- Sprinkle with grated Mozarella and Cheddar cheese
- Bake until the crust has browned.
